The very first release of Aqua Vitae, the Original Uisce Beatha(water of Life) made to a historical Recipe in Ireland. Using a 740 year old recipe, Aqua Vitae is a new spirit based on the first written record of grain distillate in Ireland. After painstaking research Aqua Vitae has been created using the original recipe of Richard De Ledrede, the Bishop of Ossory, Kilkenny circa 1324. First intended as a tropical cure all, the liquor evolved in to the Whiskey that we all know and love today. From Their Website: The Thomas Hayes Trust (THT) was established in February 2014 by Angela Hayes, her children, family and friends following the tragic loss of her son, Thomas to suicide (2010) on the anniversary of his dad’s suicide. At that time she was unaware of the suffering within the community experienced by others in similar circumstances. This awareness was illuminated when her son Alan and Angela were invited to speak on the Late Late Show, in January 2014, to tell their story of how suicide had affected their family. On that night her son Alan performed a song he composed for her called “Survivor” a song he wrote to show her that he was proud of how she had reached out for help through counselling, to help herself and her family navigate the awful pain of grief through suicide. The public response to their story and the song was phenomenal, with people suggesting that Alan’s song be recorded and the proceeds be donated to a charity. It was not her intention at that time to do anything except tell their story however, with the overwhelming response and the launching of the song an opportunity presented to set up the Trust to “support the people of Kilkenny and surrounding areas that have been affected by suicide, and to those who contemplate or contemplated ending their life” Angela says “The Thomas Hayes Trust by helping others will commemorate the life of Thomas – a son, brother and friend”, and to remember his father Tommy. After 23 years in the maturation warehouse, carefully overseen by the craftsmen of Midleton, the result is a smooth and complex Irish whiskey with notes of sandalwood, dark chocolate and zesty fruits, which is bottled at 52.5% ABV.  With 192 bottles from the cask, it is going to remain Very Rare. One of the oldest Pot Still Whiskeys bottled in Ireland is from the Old Midleton distillery, distilled in 1964 and bottled in 1994, this 30 Year-Old is a limited edition pot still whiskey presented in an oak presentation box. It is named Dungourney, after the river that had fed the old distillery. Legend says that In 1994, the Master Distiller, Barry Crockett, made a rare discovery when making his rounds of casks at the Old Midleton Distillery, warehouse 11 where his father, Max Crockett, had been Master Distiller. It was a cask not identified on his stock charts. The cask had been laid down 30 years earlier, in 1964, They made the decision to Bottle these casks and name it Dungourney 1964. Jack Daniel's Sinatra Select has been created in honour of a friendship with Old Blue Eyes and jack daniels. The bold, smooth qualities of the Sinatra Select come from the specially made Sinatra barrels in which part of the whiskey was aged. Deep grooves were cut into the staves of the casks, increasing the amount of exposure the whiskey had to the wood.
